(je nach Dicke des Fleischst\u00fcckes) bei 120 Grad garen, resp. bis das Fleisch eine Kerntemperatur von 65 Grad aufweist.<\/li>\n<li>Am besten eignet sich dazu ein BBC Smoker, es geht aber auch in einem geschlossenen Grill, oder im <em>Backofen <\/em>(nur Unter- und Oberhitze).<\/li>\n<li>Anschliessend l\u00e4sst man den Huftdeckel 10 min ruhen, schneidet ihn in d\u00fcnne Scheiben und serviert diese auf Brot.<\/li>\n<li>Nach Bedarf mit Barbecue-Sauce oder Ketchup garnieren.<\/li>\n<\/ol>\n<p><strong>Hinweise<\/strong><\/p>\n<ul>\n<li>In der Schweiz wird das verwendete St\u00fcck Fleisch Huftdeckel, in anderen deutschsprachigen L\u00e4ndern Tafelspitz (oder &#8222;B\u00fcrgermeisterst\u00fcck&#8220;, oder &#8222;Pfaffenst\u00fcck&#8220;) genannt.
